Crispy Tacos
From Tabitha in Omaha, Neb.
- 1 package large soft taco shells
- 1 can refried beans
- 1 8-oz. package sour cream
- taco sauce (any brand)
- 1 lb. taco meat (ground beef, turkey, etc.)
- 1 medium package shredded cheddar cheese
- 1/2 cup vegetable oil
Take 1 taco shell and place the following in the center:
- 1 Tbsp. refried beans
- 1 Tbsp. meat
- 1 tsp. sour cream
- taco sauce to your liking
- cheese to your liking
Fold taco shell closed so it looks like a square. Place it on a tray, folded side down, and finish making the rest of your shells.
Heat oil in a skillet (Don't get oil too hot). Again, place the folded side down in the heated oil - cook until browned and turn once.
Remove from skillet and place on a napkin. Top with lettuce and tomato and serve with Spanish rice.
